My team and I are in the process of designing an EEG headset that can interface with LabView. However, we need insight on where to start in our implementation. Suggestions are welcome.

I would suggest that you use the OpenEEG project as a reference. It details the design and implementation of an EEG acquisition device. Further, there is also an open source LabView interfaces that you could learn from.
